Tom Colicchio would approve of this recipe! You could also use Haddock, cod, or any other white fish for this one.
Ingredients
2 tilapia fillets
1 tablespoon melted butter
1 tablespoon olive oil
1 clove of minced garlic
2 green onions sliced thin
1/4 cup chopped cilantro
1 cup heavy cream
1 tablespoon lime juice
Heat oil in small pan over medium heat. Saute the garlic and onion for 1 to 2 minutes. Add the cream and bring to a simmer. Stir in cilantro, lime juice and add salt and pepper to taste. Heat your oven to 375 degrees. Line a baking pan ( I use a pyrex) with foil and spray with non stick Pam or equivilant. Brush the fillets with butter and lightly sprinkle with salt and pepper. Bake fish for 20 to 25 minutes. After the fish is done, drizzle your cream sauce over each fillet. You can garnish with a bit of fresh cilantro if you want to be fancy.
Kelly's tip- fish is done when it turns from translucent to opaque. It can be easy to over cook fish. If it starts to flake, that is a sign that you are over cooking. Internal temp should be about 140 degrees.
